What changes in the flavor and final product if I need them faster?
Room-temperature thawing warms the outside before the center. The butter can soften or leak, laminated layers can fuse, and proofing can become uneven. The result may have less honeycomb structure, weaker lift, a greasier crumb, and less clean butter flavor.
Never leave frozen raw croissants at room temperature overnight. For an emergency, keep them covered, use a controlled environment below 80°F, monitor them closely, and move into the approved proof cycle as soon as they are evenly thawed. Zorro's standard is refrigerated overnight thawing followed by controlled proofing at 76°F and about 80% humidity.
